The Ranch Kitchen's Recipes From the Garden

This year in Texas, we've had a very early spring and therefore our garden is producing earlier than usual. No complaints from our family and friends though, as my husband Scott's garden keeps everyone stocked with all the tomatoes, squash and peppers we can grow.

Each year my husband and I grow a huge garden.  I can remember well as a child having to pick and shell purple hull peas for hours.  I remember saying, "I'll never have a garden when I grow up!" to my grandfather.  I've lived to literally 'eat' my words and we are thankful I didn't keep that promise.

Gardening has become a big part of our summer each year and I save a ton at the grocery store. Just to name a few, Scott's garden this year has had broccoli, Brussels sprouts, cabbage, tomatoes, jalapeno, Cayenne, Anaheim, Cowhorn and banana peppers, summer 'yellow' squash, zucchini, cucumbers, basil (it's great to eat as your lettuce on hamburgers) and radishes.  What we don't eat, we freeze, can or give away.  We've learned a garden is pretty good PR as well with clients of Scott's. :o)

year which is amazing considering our hot Texas summers.

Some of our very favorites are our Black Krim Tomatoes.  We love these heirloom tomatoes more than any other tomato we grow each summer.  Some can get as big as your hand and they have tendency to crack some, but slicing these to have inside of a mayonnaise, lettuce and cheese sandwich is a favorite meal for me each summer.

This past Saturday, I made these pickled squash and zucchini.  I added in some onions and a few banana peppers for some added flavor.  You can keep these in the fridge or can them to serve later in the year.  You'll see my favor Kilner jars that I use for my refrigerator version.  In this recipe link below there

And you can also make these pickled okra too!  The trick is to pick them everyday or they get huge. Or, go to your local farmers market calling before to ask them to hold back the ones that are 3 - 4 inches long only.  I was schooled on that little trick from a little lady who got the best pick of okra before I did!  She had smartly called before hand to have them ready for her canning. 

We eat these pickled okra with fried fish and make a ton while you are it as they are addicting. Everybody loves them and they are great in your favorite Bloody Mary drink too.

This fried okra is a southern treat as a side dish. It takes a little time to master it, but once you do, it's pretty much a perfect food in my book.  I like to eat these as they come out of the hot grease with a little ketchup.

Next, these Zucchini Squares are absolutely the best and smell amazing coming out of your oven. My friend Debra Warren adds jalapeno peppers to hers and says they are wonderful.  You might just remove the white membrane if your heat tolerance it not very high.  We eat these warm as a side with dinner or cold as an appetizer.

This easy squash and zucchini recipe can be prepared on the stove top, on the grill or in your oven. Use any seasonings you like, but we over Tony Chachere's Creole Seasoning.

This no noodle, vegetable lasagna is one of my favorite recipes to make when squash is at it's peak in our garden.  With the pork that we buy from our local FFA kids or from one that didn't make sale of our daughter Audrey

Making hot pepper sauce is a tradition my mom handed down to me.  We use this clear sauce that is seasoned from the Cayenne or jalapenos to season our purple hull peas or pintos all year long.  It's a simple recipe and when you run out of the 'sauce', just reheat some vinegar and add it back to your peppers.  Do, however keep this in the refrigerator after opening.

This summer my goal is for my daughter and her friends to learn something new to cook each time they come over. This past week Bonnie and Audrey learned how to properly stuff peppers into jars to make this hot pepper sauce. We cut the tops off the peppers before stuffing to make the pepper sauce hotter. 

Fried eggplant is another family favorite at our house and with my brothers.  I made these just last night for them and my mom to rave reviews.  The addition of cornmeal to the flour gives these fried eggplants just the right amount of crunch.  Serve them with ketchup on the side.  We also like to fry these with our catfish.  It's surprising how many people have never eaten fried eggplant. Delicious!





You know those jumbo plastic jars of pickles you see in concession stands?  Love them....don't throw them away!  I use the gallon sized jars that I get with my pickles or those from my local Sam's Club for this recipe.  During the week, we add more cucumbers to it and take out with each meal.  You can add white or yellow, sweet onions to these and even bell peppers.  Add fresh tomatoes also that haven't gotten too ripe to this mixture as well.  Yum!

Love, love my version of ranch dip.  My Dilly Dip is super easy and fast to make with fresh dill from my herb garden.  Serve it alongside uncooked sliced summer 'yellow' squash, zucchini, green onions and cherry tomatoes!  Low fat and delicious!

 And when life gives you tons of tomatoes...make my hot sauce and freeze or can!  We like to freeze ours the best and it's truly the only way we ever eat hot sauce or salsa as some call it.  The picture below is from one of my garden hauls a few years ago in July.  My mornings in mid summer are often spent collecting, washing up and putting away our vegetables for the cooler winter months ahead.  What sounds like a lot of work is really relaxing to me and I can get lost just playing in our garden.

This is picture below of the hot sauce I put up from our fresh, garden tomatoes.  The extra tomato liquid I save for soups as well. My daughters and their friends in college begged for this stuff.  We rarely ever buy store bought salsa or hot sauce anymore after making our own, tried and true recipe. Using summer tomatoes makes this salsa sweeter, so you may not need to add the sugar in the recipe. And oh my, these Cheesy Baked Tomatoes are surprisingly a favorite of my husband Scott how won't eat cheese on anything but these.  I bake or grill along side our favorite Hereford steak and there are never any leftovers!

And last these Fiesta Bell Peppers are a great way to use your bell peppers, zucchini or squash by stuffing them with this beef filled favorite.  Anytime I can it's beef we serve off our ranch and it's always Certified Hereford Beef.

Recently as you will see below I stuffed my zucchini and summer 'yellow' squash with this recipe. This last time instead of using beef however, I used chopped up country style pork ribs left over from the night before. Use what you have and dinner is a snap.

I hope you enjoy all these recipes I've share with you today. If you don't garden, consider it. It's not too late to plant some varieties of veggies and I have friends who container garden very successfully. Ranchers have tons of mineral tubs that when holes are drilled in the bottom, they make excellent planters.  If you are in my area, I have a few I'd share just to get them off our hands!

Summer Vacation Favorites

One of my families favorite holidays is Memorial Day each year.  It's a holiday in the US that honors our veterans who gave all for our country.  Being the granddaughter of a veteran makes this holiday even more special. I'm thankful for his service, of all those in the past and those serving our country now.

As we stop to commemorate this weekend and enjoyed time with our family and friends, pay tribute with a prayer, remembrance or kind thought for those still serving so that we all may be safe this holiday.  I sometimes think that only until we've seen a world outside our safe borders, do we truly understand what freedom means.

Our family this year as in those of the past, spent our time at the lake enjoying it with family and friends. We fished, swam, tubed, chair skied, dodged a few rain storms and most of all ate too much! The beauty of having three daughters is the help cooking up family favorites and the clean up afterwards.  As my husband and I began to shop for this last next weekend, it's their favorites we bought toward. With our girls getting older, we enjoyed the quality vs. quantity time we spend with them since the older two live on their own now.  Holiday weekends and summer vacations are cherished more because we get to spend time with them especially when it's at the lake.





There were lots of family favorites this weekend to cook and over the summer ahead, but top of the list will be a brisket from our the Hereford beef we raise on our ranch.  Since you do not get as many of this cut, it's one that is cooked on special occasions at our place. Try this recipe for brisket tacos with the leftovers. One of our very favorite leftover meals!

Most recently we love cooking both brisket and pork serving them as soft tacos in yellow corn tortilla's with my coleslaw with it's sweet dressing.  Cole slaw isn't just for BBQ or with fish at our house.  We love it for a light topping over our tacos.  For years I bought my coleslaw dressing until I started making my own in bulk to use over our lake weekends. This recipe is simple, delicious and light.  Sugar can be substituted for Splenda substitute and I like to add red cabbage and onion for flavor in our coleslaw and add color.  Add the dressing over the cabbage about 20 minutes before you serve your 'slaw' as we say in the south or it will become a bit soggy.  I also like to keep my coleslaw at a safe temperature by serving it in a bowl on top of a larger bowl filled with ice.



Appetizers are something we like to have on hand to eat for snacks or add to lunch or dinner.  Days at the lake or on vacation are long ones thankfully and dinner may not be until after eight most nights. So these appetizers below are served as a kind of happy hour fare that are welcomed by all the hungry kids spending the weekends with us.

Since our garden is exploding, I love to serve fresh cucumbers, yellow squash and zucchini with my Dilly Dip featured below.  When I can, we use fresh dill, but dried is just as good.  Honestly, there is nothing better and low fat than ditching the chips or crackers and using fresh veggies with this dip!

Some of the vegetable side dishes we served were my sauteed squash and zucchini with potatoes.  My new favorite potatoes are the Butter Golden Yukon Gold Potatoes that are new to our grocery.

These potatoes saute well in the skillet along side my squash when sliced 1/3 inch thin and bake super fast in my microwave.  Our favorite way to serve squash is with this recipe below.  You can cook on the stove top or in foil packets along side your meat as you grill.  Just make sure to spray your foil with Pam oil spray and add about 6 ice cubes to help place moisture in your squash as they roast.

For dessert the classic choice was smores over the campfire each night with our new favorite addition of Reece's Peanut Butter Cups.  Personally I like a little char on my marshmallows and peanut butter cups throws it over the top.  Sitting by the fire each night for us is a nice way to bring the day to a close and catch up with our girls.  A few weeks ago we got the surprise of watching a comet streak across the sky. That moment was really neat to share with our girls.


For these smores, just use the Reece's Peanut Butter Cups instead of Hershey's Chocolate bars, top with a marshmallows and place between two graham crackers for an over the top treat! We love, love them!  Our Audrey asked everyone this weekend if they wanted their smore rare or medium rare....personally I like mine burnt...so well done!

Strawberry, Strawberries!

Strawberries are at their sweetest right now.  At local farms you can also pick your very own. It's a sweet tradition in our family to do this at least once each year.

2015 Memorial Day Weekend at the Texas Coast


My daughter Bethany put it best when she described our weekend at the Texas coast to friends before she made the long journey from Lubbock.  She said, "We will be with dear friends where I can be myself and just relax!"  Memorial  Day weekend has always been a special time for us where we usually camp with our girls and friends at the lake, but for a change this year we spent it with our dear friends Tommy and Melinda Smith and their sweet family at their beautiful beach house at Rollover Pass just off Galveston Island.

My husband Scott and Tommy have been friends since grade school.  They've always continued their friendship and seemed to just 'get each other' like no friend I've seen him have.  His parents were and are very dear to us.  Tommy's boys and our girls grew up together as we in turn raised our little families.  Some of our favorite memories together will always be floating the Big Cypress Creek to Caddo's bayous and lake loaded with the biggest and best water guns ready to blast each other just about the time we got to the state park.  We'd do this every summer for about five years on Memorial Day and usually have our other great friends Rex and Carol Thompson and their kids in tow.  We'd pack huge lunches and sit under the Cypress trees that dripped with moss and enjoy the beauty that is Caddo, the largest natural bayou and lake in Texas. 

I remember all of us having football parties after the Friday night game where we'd each bring an appetizer and the kids would put on their pj's while we'd all visit.  It's times like these our kids still remember and my oldest daughter Ilissa mentioned that weekend that we sure did like to have a lot of get together's with our friends she remembered growing up!

In the past year with all of our lives getting busier and kids growing up and off at college we haven't spent near the time together we should have, but we fixed that this weekend.

So it was only fitting that we spend Memorial Day weekend with Tommy, Melinda and their sweet kids Brad, Ryan, Kayla, Kara and exchange student from Italy Clara.  We swam, dodged a few rain storms, the men fished and we ate everything from fresh seafood the men caught to steaks while catching up, playing board games and dominoes.  Melinda and I both enjoyed cooking, sharing recipes and catching up about our kids.

Melinda is a fantastic cook and wowed us all weekend with some of her recipes.  Her french bread was absolutely delicious and we could have made a meal out of it alone.  The steak marinade was equally as good.  So good in fact that we even ate the leftovers for breakfast the next day along with some repurposed baked potatoes that I sauteed in butter and Tony Chachere's.  The Redfish and Sea Trout were a real treat coming from the men's previous days catches and there was enough left over for us each to bring home some frozen for later meals.
